Stir Fried Swamp Eel 紅燒黃蟮


Ingredients:
Swamp Eel 炒黃蟮 2lbs
Kosher Salt 5Tsp
Garlic 8 cloves minced
Ginger 4 slices minced
Green Onion 3 bundles
Cooking Oil 4Tsp

Seasoning 1:
Bean Paste  1/2Tsp
Dark Soy Sauce 2Tsp
Soy Sauce 2 1/2Tsp
Hoi Sin Sauce 1 1/2Tsp

Seasoning 2:
Hot Water 1cup
Rock Sugar 1Tsp or 4 small dice
Cooking Wine 2Tsp
Red Pepper Flakes 1tsp
Corn Starch + Water Mixed 1Tsp each

Method:

  1. Throughly rinse and clean swamp eel until not bloody anymore.
  2. Cut eel into approximately 2" long chucks and or into 2" long and skinny strips, if not already done so by fish monger.
  3. Drain eel and place them into a plastic bag.  Add up to 5 Tsp of Kosher salt to eel.  Close/seal the bag and rubbed the eel from the outside of the bag.  This will clean the eel's skin.
  4. After rubbing and cleaning the eel skin for a couple minutes, rinse and drain the eel.  The cleaned eel should be shinny and not bloody.  Set aside.
  5. Minced 8 cloves of garlic and 4 pieces of ginger.  Cut 3 bundles of green onion into 1" long sections.  Separate the white and green part of green onion sections.  Set aside.
  6. In a shallow pan with lid, add 4 Tsp of cooking on over medium high heat. 
  7. Add ginger and white part of green onion into the pan to stir fried until fragrant.  Add garlic into the pan and continue to stir fried for 1 minute.
  8. Add more oil as needed.
  9. Add 1/2Tsp of Bean Paste in the center of the pan and let it warm up for 30 seconds and stir fried.
  10. Add 2Tsp of Dark Soy Sauce, 2 1.2Tsp of Soy Sauce, and 1 1/2Tsp of How Sin Sauce into the pan and stir fried to incorporate.
  11. Turn to high heat.
  12. Add eel chunks into the pan slowly, evenly, and keep the bloody liquid away from the pan.  Let it pan fried for 1 minute and then stir fried for another 1 minute.
  13. Add 1 cup of hot water into the pan.
  14. Add 1Tsp or 4 dice of Rock Sugar in the center of the pan to dissolve.  Cover with lid.
  15. When the liquid inside the pan is boiling, turn down the heat to medium low and let it simmer for approximately 20-25 minutes.
  16. 20-25 minutes later, open the lid and stir fried the eel and add 2Tsp of Cooking Wine around the pan.
  17. Add 1tsp of Red Pepper Flakes into the pan.  Stir fried and taste to adjust.
  18. Add the green parts of the green onion.  Stir fried for 30 seconds.
  19. Turn heat to low.  Mix 1Tsp of Corn Starch and 1Tsp of Water.  Mix well and add into the pan.  Stir fried to incorporate.
  20. Serve immediately with rice.
