Recipe: Homemade Organic Granola+++

Homemade Organic Granola Ingredients 4 cups old-fashioned rolled oats 2 cups sweetened shredded coconut 2 cups sliced almonds 1/2 cup vegetable oil 1/2 cup good honey Optional: 1 1/2 cups small diced dried apricots 1 cup small diced dried figs 1 cup dried cranberries 1 cup roasted, unsalted cashews Directions: Preheat the oven to 350 degrees F. Toss the oats, coconut, and almonds together in a large bowl/strong plastic bag.  So, no clean up. Add the oil and honey into the bowl/bag. Stir/toss to mix everything together and don't worry if it seems to need more liquid.  An Even coating is sufficient. Grease a medium  baking sheet pan lightly. Pour in the mixture and coat evenly on the sheet. Bake for 10 minutes and stir occasionally with a spatula, until the mixture turns a nice, even, golden brown for a total of 20 minutes. Remove the granola from the oven and it will continue to cook. Allow it to cool and s tir occasionally. Add the optional ingredients

Recipe: Hitsumabushi 鰻魚飯

Hitsumabushi 鰻魚飯 First attempt  Ingredients: 1 Unagi Kabayaki - Roasted Eel Note:  Available at Uwaujimaya Cooked Rice Unagi Sauce: 2 tbsp Mirin 1 tbsp Sake 2 tbsp Soy Sauce ⅔~1 tbsp Honey Cook rice in 14cm LC Use 2 cups of rice and it is good for 4 people with 2.5 cups of water Cover with lid and cook over medium heat until water bubbles surface for about 4 minutes Still the bottle of the LC Turn it to low heat and cook for another 7 minutes Put unagi on top of rice and let it cook for another 2 minutes Do not open the lid Turn off the heat and let it sit for 10 minutes Open the lid and brush the unagi sauce onto unagi and drizzle some on the rice Serve immediately See link   for different ways to enjoy Hutsymabushi.

Recipe: Quick Stir Fried Spaghetti 快炒意粉

Quick Stir Fried Spaghetti 快炒意粉 Ingredients: 1/2 box of Spaghetti Bite size Meat Enoki mushroom or other sliced mushrooms Chopped Green Onion 1 brunch Tobiko (optional) Seasoning: Soy Sauce Oil 1 Tsp Oyster Sauce 1Tsp Sugar 1 tsp Oil 2 Tsp Chopped meat and green onion in bite size Cook spaghetti to 70% cooked Drain and save 1 cup of pasta water Do not rinse spaghetti Add oil to wok/frying pan to medium high heat Add spaghetti in and quickly stir fried it and add 1 ladle of pasta water Add meat and mushroom and stir fried for few minutes Add seasonings and stir fried until it is well mixed together Add green onion and stir fried Once all the liquid is evaporated, dish and add optional tobiko Serve immediately

涼拌珊瑚藻/ 海底燕窩 Coralline Algae Appetizer/Salad Ingredients: Coralline Algae 45g  Cucumber 1 medium size  Carrots 70g 3 small size Seasoning: Sesame Oil 1 Tsp Oyster sauce 3 Tsp White Vinegar 2 Tsp Sugar 2 Tsp Fine Minced Garlic 1 1/2 tsp Methods: Soak algae overnight or no less than 4 hours (note:  ice bath for extra crispy texture) Rinse the algae several times in the process Chop or cut algae into bit size pieces Note:  When cutting the algae, it is sticky to the touch.  That is the collagen from the plant instead of an animal. Schramsberg I joined Schramsberg Cellar Club in December 2015.  It was a Christmas gift to myself.  This is also the very first wine club I joined. The Schramsberg estate is tucked into the densely forested slopes of Diamond Mountain, a few miles south of the town of Calistoga, and is home to the oldest hillside vineyards in Napa. It totals 218 acres with 43 acres planted to vines. Before my time, Schramsberg played a role in world history. The Blanc de Blancs was used for President Nixon’s 1972 “Toast to Peace” with China’s Premier Zhou Enlai. DOC Denominazione di origine controllata  ( DOC ) ( pronounced  [denominatˈtsjoːne di oˈriːdʒine kontrolˈlaːta] ;  English : controlled designation of origin) is a  quality assurance  label for  Italian   food  products, especially  Italian wine  and  cheese  ( Denominazione di origine protetta ).  Denominazione di Origine Controllata (DOC):  DOC wines are much more commonly found. The rules governing quality and authenticity are still very strict, but they're a little more generous than those for DOCG status.
