Recipe: Original Fluffy Pancakes (Serve 1-2) ++++

Original Fluffy Pancakes
Serve 1-2

Ingredients:
Dry Ingredients-
All Purpose Flour 1 cups
Baking Powder 1tsp
Baking Soda Half of 1/4tsp
Salt 1/2tsp

Wet Ingredients-
Egg White from 3 eggs
Salt 1/4tsp

Egg Yolks 1
Buttermilk 1/2cup
Melted Unsalted Butter 1 1/2tsp (optional)
Vanilla Extract 1/2tsp
Maple Syrup 2tsp
Note:  Adjust buttermilk portion as needed depending on the dryness/wetness of the batter.

Method:

  1. Add all dry ingredients together in a mixing bowl:  All Purpose Flour 1 cups, Baking Powder 1tsp, Baking Soda 1/4tsp, Salt 1/2tsp.  Mix well and set aside.
  2. In another small mixing bowl, mix 1/3 cup of Buttermilk, 1/2tsp of Melted Unsalted Butter (optional), 1/2tsp of Vanilla Extract, 2tsp of Maple Syrup and 1 egg yolk.  Set aside.
  3. Crack 6 eggs and separate 3 egg whites into a smaller mixing bowl.  Discard 2 egg yolks and add 1 egg yolks in the wet ingredients bowl.
  4. Mix all wet ingredients together until incorporated.
  5. Add wet ingredients to dry ingredients.   Mix slightly and do not over mix.  The texture should be lumpy but pourable on the thick side.  If the texture is too dry.  Adjust with orange juice or buttermilk as needed.  
  6. Add 1/4tsp of salt to the egg white.  Hand mix or Use a hand-held beater to beat egg white and salt until soft peak.
  7. Fold 1/3 of the beaten egg white into the batter and do not over fold.  Repeat this step until all egg whites are incorporated.  The texture should be lumpy but pourable on the thick side.
  8. Preheat a lightly evenly greased frying pan over medium-low heat.
  9. Add the desired amount of batter in the pan to cook for approximately 2 minutes or until bubbles surface.  Check the pancake for a golden color.
  10. Gently, flip the pancake and cook for another 1 minute or until golden color.
  11. Repeat the above steps to cook pancakes until all batter is used up.
  12. Store the pancake in a warm oven and cover with a clean damp towel to keep warm.
  13. Ready to serve with syrup.
