Recipe: 莧菜湯 Red Spinach Soup++++

莧菜湯
Red Spinach Soup



材料:
莧菜 1束
蒜頭 3粒
清雞湯 1罐 or 500毫升
熱水 250毫升
油 2Tsp
鹽 

1.  Clean and cut the 莧菜 and remove the tough part
2.  Drain the 莧菜 and set aside
3.  Flatten the cloves of garlic and set aside
4.  Add 2Tsp of oil in the cooking utensil to pan fried the garlic and quickly stir fried the 莧菜 for a couple of minutes to bring out the 莧菜 flavor
5.  Add the chicken broth and hot water 
6.  Bring it to a boil
7.  Taste and add desirable salt and serve immediately
Note:  Do not cover lid.  Otherwise, the beautiful green 莧菜 and red soup will turn yellow.
